- 6 Roma Tomatoes
- 1 Shallot
- 3 Peeled Pods Fresh Garlic
- 1 Tablespoon Balsamic Vinegar
- 4 Tablespoons Tuscan Herb Olive Oil
- Salt & Pepper to taste
- Fresh Basil
- If making crostini, Garlic Olive Oil
1. Finely chop garlic and basil, sauté in med low heat for 3 minutes just to soften garlic and shallot and release the flavors.
2. Finely chop the tomatoes removing any seeds while chopping.
3. Mix tomatoes with cooked garlic and shallots, add remaining Tuscan Herb Olive Oil, Balsamic Vinegar, salt and pepper to taste. Let the mixture sit for about an hour for flavors to combine.
4. To make crostini: Cut baguette into slices, brush with garlic olive oil and toast at 350 degrees for 5 minutes on each side.
5. Spoon tomato mixture over crostini making sure to get some of the juices with each spoonful. Top with fresh chopped basil and enjoy!
